Fry the Chicken

In a deep pan or wok, heat oil over medium flame. After the oil is hot, Add marinated chicken pieces in and deep fry until golden brown & crispy. Take out fried chicken pieces and set them on a plate with a paper towel to drain excess oil.

Prepare the Gravy

In a different pot or large frying pan, heat 2 tbsps of oil over tool warmth. Then, put the chopped garlic and ginger-green chillies. Cook for 1 minute or until garlic is fragrant.

Then add the chopped onion and capsicum. Cook for 2-3 minutes, stir-fry until the vegetables are tender but still firm to bite.

Add the Sauces

When the vegetables are cooked, now add soy sauce, red chili sauce, green chilli fruit salt and vinegar. Mix it well on high degrees flam! Mix everything together while stirring well so all the flavours combine. For more of a kick, just add some more chilli sauce to taste.

Make the Gravy

Add the chicken broth (or water) and let it simmer for a minute or two. Then bring it to a boil and pour the cornflour slurry in (cornflour + water). Whisk constantly to avoid lumps. This will make the dish rich and shiny in texture.

Combine Chicken with Gravy

In the gravy, gently mix all the fried chicken pieces so that they get coated with sauce evenly and properly. Allow it to boil for 2-3 minutes so that chicken and gravy flavours absorb each other well.

Garnish and Serve

Finally, add some black pepper powder and salt to taste. Garnish with freshly chopped spring onions and serve the hot chilli chicken along with gravy.

Tips for Perfect Chili Chicken With Gravy

  • Control the spice: Increase or decrease the number of green chillies and chilli sauce as per your liking.
  • Frying tip: Make sure the chicken pieces are in a single layer and cook them up separately so that they crisp evenly.
  • Consistency: More cornflour slurry if you prefer thicker gravy. If you would like a thinner sauce, add more chicken broth or water.
  • Crispy chicken: If you want your chicken pieces to be crispier, double-fry them. First, fry to golden, let them sit and then the second fry for extra crispy.
